Quail Meat Kebobs with Grilled Vegetables

Ingredients:

  • 8 quail breasts, boneless and skinless
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 8 cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Directions:

  1. In a bowl, mix together olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper.
  2. Cut the quail breasts into bite-sized pieces and add them to the marinade. Let them marinate in the fridge for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the quail meat onto skewers, alternating with slices of bell peppers, onion, and cherry tomatoes.
  5. Grill the kebabs for 5-6 minutes per side, or until the quail is cooked through and the vegetables are tender.
